About this deal

Instead of chopping up pieces of chocolate and folding it through the blondie batter, I added an entire layer of Galaxy Caramel to the centre and oh my God, it worked so amazingly well! Whenever making gluten-free bakes I would recommend using a good quality brand of flour that will likely be a blend such as rice and oat flours, mixed with a binder like xanthan gum to help with the texture, and of course some raising agents. The buttercream is regular vanilla buttercream with food coloring. Be sure to use a food coloring that's suitable for cake batters, buttercreams, icing, and icing. I recommend using gel or paste food coloring.

If you have some neat whisky you could add this instead, half the amount the recipe calls for so when it states 40ml of Baileys use only 20ml of whisky as it is stronger, the Baileys is already diluted with cream and other flavours. Like me, you can put some chopped galaxy throughout the cupcake – but its completely optional.
