I couldn’t help but wonder if it was a marketing ploy or if it really was better than my usual zester. The finer, sharper, closely laid out teeth of the 3-in-1 tool make grating ginger not only easy, but fast. Models with small etched holes were also less wasteful than the other types, pulverizing and pushing through more puree from a standardized piece of ginger (1 inch long and weighing 14 grams), leaving just 1 to 3 unusable grams of fibrous pulp on the grater face.

These days most recipes featuring ginger are developed using a rasp-style grater, which produces fluffy bits rather than a puree. When I first used the tool, I marveled at the pile of fluffy ginger it produced—so much so that I grated too far too fast and nicked my finger, which leads to the second reason why I love the tool. So with ceramic graters there’s a risk of using too much ginger in recipes (though admittedly that’s not really a bad thing in my book). To a lesser degree, the size of the grating surface also helped determine speed: The larger the area, the more ground we could cover before starting a new stroke or before the ginger clogged the holes. I also don’t love how the edges along the back are curled over, so I can’t just swipe down the length of it to remove the ginger clinging to the back.

These tools encompassed a range of sizes, shapes, materials, and grating styles: Some had rasp-style “etched” holes, some had puckered “stamped” holes punched out by a machine, and others—traditional Japanese oroshigane—had either metal teeth or ceramic nubs.

To remove "stuck on food", first soak the tool in warm water and then use a soft bristle brush to remove pieces. When used with harder ingredients, a fine grater produces powder-like results that pack an intense flavor.
