Use non-stick spray or a light coat of cooking oil inside stainless steel smoker boxes to make ash removal a breeze. Grilling is a great way to cook meat and other foods, but grilled chicken, steak, and other barbecue favourites can lack that smoky “char” taste you get from smoking. Season cast iron smoker boxes with cooking oil (as you would a skillet) to inhibit rusting and stop ash from sticking.
Weber’s Smoker Box offers a supremely easy way to infuse meat, veg and cheeses with a moreish smoky taste. This build is a fair bit more complicated, but if you have the skills and equipment, it’s certainly a budget way to get yourself an offset smoker. Consider the following scenario: if your grill has two burners, turn on one of them, position the smoker box over it, and turn off the second burner.Unlike the ugly drum smoker or the flower pot smoker, this is a complicated build that requires specialist tools, skills, and a fair bit of time.
You really don’t need much of a guide to drilling holes in a filing cabinet, but if you want to see this kind of smoker in action, check out this video by Broke Yakin. Drill a hole in the bottom of the tank, then fill the entire tank with water through the valve to displace any remaining propane. Prepare for queues around the block once your friends and family realise you have this bad boy parked in the garden. Use a set of heat resistant tongs, remove the smoke box from the grill grates and let it cool before cleaning it. Compact and practical, there’s plenty of space to smoke your meats while cooking, yet it won’t hog too much storage space once you’re done.
A barbecue smoker box is a simple metal add-on that you can fill with wood chips or pellets and place in or on your grill to impart a smoky flavour. Even if you were to place the box close enough to the flame or heating element, the resulting smoke would quickly drive you out of your house.
