Truth: this test was just an excuse for us to gorge ourselves on chocolate chip cookies and forget about our troubles. This is evidenced in our winners, above: although semisweet is generally thought of as having less cacao and more sugar than bittersweet, Scharffen Berger's semisweet contains 62% cacao solids, while Ghirardelli's bittersweet contains just 60%.

Semisweet chocolate walks the line between milk and dark, though how close to one end of the spectrum the chips vary from brand to brand.

These chocolate chips will allow you to recreate classic recipes, such as cakes, cookies, and other delicious recipes. The cookies we made with them were a little splotchy, but the flavor was complex (if a little less intense than the first two options).If you don't want to make your own semisweet baking chocolate substitute or don't have unsweetened cocoa powder on hand, there are other options.

But for the rest of you, please know that Lily's Stevia-Sweetened Baking Chips will indeed taste different.If you like sweeter baking chocolate, use a proportion of 1 tablespoon unsweetened cocoa powder to 1 tablespoon sugar to 1 teaspoon melted butter or shortening (or oil). You might be wondering where milk chocolate fits into the sliding scales of sugar and cocoa percentages. You might need to add a little extra sugar tothe baking mix to increase the sweetness, but no extra butter or oil is necessary.

Rather than sprinkling the chocolate tips with nuts, you can roll them in red and green jimmies or leave them plain. And they were the "control" chips, aka the ones we kept popping into our mouths for no reason during the taste test.When baked into cookies, the chocolate had to maintain its good flavor—or better yet, develop it further.
