About this deal

First, place all the ingredients in a pot and heat up over low heat. Stir to help melt the ingredients and combine them. The mixture will start developing a smooth and creamy texture. Place all of the ingredients, apart from the salt, into a large, dry saucepan over a low heat. Continuously stir until the butter has melted and the sugar has completely dissolved. Instead of whisking the fudge, you can stir and beat it with a wooden spoon. I find that to take a lot longer though, so I prefer using a whisk. I was a massive fan of Roald Dahl stories when I was little. I know, who isn’t? But I loved them. I had a tape of Fantastic Mr Fox that I listened to again and again and again, and my favourite books were probably The Witches, Danny Champion of the World and Charlie and the Chocolate Factory. (The latter was a particular favourite as it had a character in it called Josephine. Which is my name, in case you didn’t know.) Finally, cover the fudge with more parchment paper. Let it cool down to room temperate before placing it in the fridge to chill and firm up.

Fudge cubes are a thing of legend in our family. When I was younger we used to go on outings to Clarks Village in Street with my Gran. Clarks Village had a small Thorntons outlet shop, which was a bit of a beacon for me as a child amongst the shoe shops and old lady clothes. As I got older and had children of my own the outings to Clarks Village continued and no trip was complete without stopping at Thorntons for mini fudge cubes. I don’t know what it is about them that makes them so delicious, but if you’ve never tried them then you are missing out. This caramel fudge is absolutely great on its own, but feel free to include some of your favorite add-ins for added texture and flavor. Here are a few ideas: If you feel like really going to town with your fudge cubes, you might want to try this Salted Caramel Chocolate Fudge Cake! Everyone loves a chocolate cake but this recipe has a delicious twist - it's filled with a mouthwatering salted caramel buttercream and topped with a chocolate fudge sauce. Plus, a sprinkling of vanilla fudge cubes for an extra flavour and a touch of decoration! Once the fudge is set, you can cut it into squares. I like to cut mine into 1-1.5 inches, but they don’t have to be perfect. How to StoreMost importantly, though, this old-fashioned homemade caramel fudge can be enjoyed with so many things! It’s phenomenal served alongside ginger tea, green tea, iced latte, and iced matcha green tea latte!

Slowly bring the mixture to a rolling boil over a medium-high heat for 10 minutes. Stir continuously, especially around the edges, to stop the mixture catching on the bottom of the pan and burning. Be very careful as the mixture is very hot. Demerara sugar: I used demerara sugar, but if you want, you could substitute turbinado sugar or light brown sugar, instead. But I really think that demerara sugar gives a nice caramel color and flavor. Chef’s Tip: If you’re using any other flavors or add-ins, it’s best to add them now, before whisking. Line a 20cm/8inch square tin with baking paper. Place a glass of cold water in the freezer (or in the fridge with ice cubes). Firstly, let's start with one of our own recipes. FOR ALL THOSE STRUGGLING After 1 success by flop, and 4 fails where I kept either ending up with caramel or an oily mess, along with blisters from the wooden spoon, I started looking at different recipes and methods to understand how each step works. They u should stir fudge, but thats not always the case. Now this recipe has a way too high liquid ratio. Long story short, this is what u do: If you are using a thermometer – the fudge should reach about 240-240ºF/115-120ºC. You can use a candy thermometer if you have one or, like me, you can use an infrared one. Although I loved that there were so many people doing things by hand, I did love the machines too. There is something hypnotic about watching hundreds and hundreds of little chocolates in neat rows, chugging along a belt, being coated in yumminess. It’s almost like they are alive and on a journey – tiny adventurers on a quest to get themselves through each machine and covered in just the right layers of chocolate. I imagined them all doing a little cheer when they make it into their boxes. There is nothing quite like caramel fudge! This homemade caramel fudge has only 4 ingredients: sweetened condensed milk, milk, demerara sugar and butter. It’s really easy to make and it would also be a perfect edible gift!Next up is this Mocha Almond Fudge Ice Cream recipe. You definitely don't need an ice cream maker for this recipe. If you're a fan of those ice creams with a distinctive coffee flavour, you might want to give this a try. Just melt your fudge cubes to get started.
