There’s a little less sugar in this than in a usual daiquiri, to compensate for the sweetness of the rum. Play with the ratios of sugar syrup until you find something to your liking. A Central American molasses rum, Plantation Gran Anejo, is distilled and aged in Guatemala in casks formerly used for American whiskey before being re-casked and further aged in France at Maison Ferrand’s Chateau de Bonbonnet in barrels formerly used for cognac for up to a year. It has a warm, slightly spicy note from the cinnamon powder that pairs well with the tart flavor of the lemon juice and the sweet, tropical flavor of the pineapple juice. It is presented in a squat Scotch-style bottle with a bright and colourful label depicting tropical flowers, birds, and lizards and boldly marked “Isle of Fiji.” On The Nose Still, it’s a fine mixer for your next poolside drink. And for what it’s worth, the price is pretty reasonable for both expressions.

This version of Old Fashioned is made with pineapple rum, demerara syrup, lime bitters, overproof rum, and ginger bitters. In Plantation’s case, though, Original Dark feels like it was named less to take advantage of the category’s loose restrictions, and more to simply fill a gap that consumers expected. There’s no unaged rum in this blend, and the company claims its use of caramel coloring is “solely to adjust—if needed—the color between different batches.” This one is a blend of 1-3 year old column and pot still Barbados rum, and (presumably a smaller quantity) of 10-15 year old Jamaican rum, which are “blended into a wooden vat to age for 3-6 months in the southwest of France.” This is the standard Plantation playbook, as rums are moved from tropical aging to blending and secondary aging in France, often in cognac barrels.Some producers are also adamant about only using Victorian-style pineapples. One of the few Plantation rums with an age statement on the label, this might be considered the flagship of Plantation’s “signature blends” lineup, and is one of the brands they’ve been offering longest. The five year age statement is nice, if not particularly impressive—it makes this a “moderately aged” rum. It’s important to note that 3-4 years of that time is tropical aging in Barbados, and the remaining 1-2 years is aging in France in “Ferrand casks” previously used to mature cognac. That’s a significant period, which makes this ultimately a product substantially different than simply a Bajan rum—there’s also the moderate dosage to consider as well. Products like this are at the heart of the dispute between Maison Ferrand and the other Barbados distilleries. Earlier this week I wrote about one of my favorite liquors (if not my absolute favorite) in the world: plantation pineapple rum. Plantation O.F.T.D. Rum is our take on that classic style of overproof rums. And not just ours: to join him on the quest to get the blend and the proof just right, Alexandre Gabriel scoured rum joints around the world to find six grizzled old salts who knew which end of a rum bottle was which. It continues on with cinnamon, raisins, nutmeg, oak and molasses with smoky accents. First place went to Nico de Soto of Mace in New York and Danico in Paris. His recipe calls for a total of three rums: the aforementioned Plantation pineapple rum; New Grove Plantation white rum, which has notes of guava and banana, from the island of Mauritius; and Père Labat 40, an agricole-style rum from the island of Marie-Galante. To this is added three-quarters of an ounce of pineapple juice, a half-ounce of lime juice and a quarter-ounce of rich cane syrup. Arriving with no garnish other than a fluffy crown of froth, thanks to the fresh pineapple juice, McGee described it as “archetypal” while Favre found that “the cane flavor of the rum supports the fruit,” for a particularly balanced and integrated expression of the drink.

A beautiful copper color liquid coats the glass leaving long legs along the sides. The nose is similar to smelling the rind of pineapple to see if it’s ripe. Its earthy notes have some raw almonds and hints of pineapple. It’s not sweet. The palate gives away its young age; however, once you get past the slight alcohol burn, there are many flavors to explore. The first is butterscotch followed by cloves and bananas. The pineapple comes in late but doesn’t dominate the palate. Baking spices (cinnamon, nutmeg, and cloves) finish this rum in our throat and leaves a very satisfying warmth. We then added an ice cube to help balance the alcohol note. The rum significantly changed creating a hardier mouth feel and opening up the sweetness of the pineapple.

Daiquiri

A sweet and full-bodied rum, Plantation Gran Anejo opens with spiced toffee and vanilla. Mid-palate reveals nutmeg and cinnamon. Chuť je iba mierne sladká, ale hlavne dymová a za dubom, a vystupujú z nej naozaj len decentné tóny vanilky, medu, sliviek, hrozienok kokosu či zázvoru (vôňa navnadí, ale chuť už nie je tak výrazná a mnohovrstevnatá).
