About this deal

Return all the pork and any juices from the bowl to the wok, add the chilli flakes and powder, and stir-fry for about four minutes, until fragrant. Add the garlic, stir-fry for a minute or two, taking care it doesn’t catch and burn, then stir in the hoisin, bean paste, ketchup, soy, sesame oil, sugar and white pepper. Simmer, stirring constantly, for seven minutes, then take off the heat. Thai classic Pad See Ew is wonderfully chewy rice noodles and tender hunks of beef in all their glory. In short, perfect for Monday doldrums. Once your wok is seasoned, be sure to care for it properly (never use dish soap or abrasive scrubbers, just hot water and soft sponges; allow it to dry completely before putting it away; give the interior a light coat of oil if you’ll be storing it for a while in between uses), and if it ever does start to show spots of rust, you can simply scrub them off and repeat the seasoning process. Prep Everything Ahead of Time Always use an oil with a high smoke point—meaning something that can be heated to very high temperatures before it starts smoking—and a neutral flavor. Peanut oil, canola oil, and grapeseed oil all fit the bill. (See our guide to cooking oil for more on each type, and others.) Heat a wok or a large, high-sided frying pan and add a tablespoon of sunflower oil. Once the pan is very hot, and working in batches, stir-fry the pork batons until golden brown all over and the fat starts to melt. Transfer to a bowl with a slotted spoon and repeat with the rest of the pork.

Soy sauce is one of the oldest forms of fermentation in human history. Its deep, sweet and quintessentially umami flavour comes mostly from long-fermented (traditionally underground) soybeans. We carefully triple-box every oven to ensure safe arrival, and we usually ship this just once or twice a week so please note it may take a bit longer than expected to get your oven. Found in most Thai homes, the "Tao" is a small and convenient way to cook outdoors, and it doesn't make much mess. Used for generations, this clay oven is now more efficient than ever thanks to a new design which has captured the interest of Thai academics and government officials who are promoting it as a great way to reduce fuel consumption. Using very little charcoal, this cooker produces enough heat to stir-fry small or large woks, boil water, or barbecue meats. We're importing this from the innovator who is credited with the improved design. There’s no denying this wok is quite the looker. Not only does it benefit from the quintessential retro Smeg aesthetic, it’s also available in a range of different colours so you can find the perfect shade to match your kitchen. Outside of its “beautiful design” and handy oven-safe abilities, its 5.2 litre capacity and 30cm diameter also makes it perfect for batch cooking and big family meals. We stand behind the product and will replace any shipment that arrives damaged, but keep in mind it is a handmade oven with some inherent imperfections. Massage the pork again, this time until the lean meat feels silky to the touch, then leave to marinate at room temperature for a further hour and a half. Another durable option, we like how sturdy this wok felt on the hob and appreciated its oven-safe design. If you’re someone who uses your wok from morning to night, every single day, then this Prestige model should be on your radar. Made from recycled aluminium, it showed no signs of wear or tear during testing and remained as good as new, even after multiple dishwasher cycles.

Chewy, wok-charred noodles are amazing, and in this version of the Thai classic pad see ew, they’re paired with seared slices of flank steak and Chinese broccoli. Make sure you prepare the noodles as directed in the recipe so you don’t end up with one giant clump. Get the Pad See Ew recipe. Shrimp Fried Rice On the Grill Put everything except the pork belly, vegetable oil and sesame oil in a large shallow dish. Lay the strips of pork in the marinade, massage well with your hands, then set aside at room temperature for 20 minutes, during which time the meat will release liquid into the marinade. Another top scorer, but significantly cheaper than the one above, this wok benefits from having a long and sturdy handle that stays cool while cooking. It received full marks on every one of our food tests, preparing egg fried rice just as well as a classic stir fry. Woks tend to either have one long handle for easy tossing and turning, or two smaller c-shaped handles for easy manoeuvrability. There are some hybrid models that have a long handle on one side and a small grip handle on the other though, such as the high-scoring M&S Chef Hard Anodised 30cm Wok we tested. Add another splash of oil. Add the chilli and the onion mix. Stir for a second before adding the other mix. Flip and toss the vegetables in the wok if you can, and keep the vegetables moving with a wooden spoon, turning them over every few seconds so they all keep feeling the heat at the bottom of the wok. Season with a good pinch of sugar, salt and pepper.tbsp Mei Kuei Lu Chiew rose petal liqueur, from any good Chinese food store (or absinthe, at a pinch) Pre-heat the barbecue for direct grilling at 200–230°C. Mix the garlic, ginger, chilli, spring onion and red onion together. Mix all the other vegetables together, keeping the coriander to one side. Keep the two mixes separate. Flank is the perfect choice for the Tao Burner. We had fun cooking two flanks over just a dozen hot briquets. As far as utensils, the most important thing is that you have some that won’t melt, meaning absolutely no plastic. Metal tongs work well for tossing noodles, and long-handled spatulas are great for stir-frying everything else (the longer the handle, the farther your hand is from the intense heat). According to Chinese cooking expert Fuchsia Dunlop, who offers tons of other good wok tips, you should also have have a bamboo brush or whisk to wipe down the wok in between batches of food. Apologies, but here are a few more general principles of wok cooking that apply no matter how you’re heating it:

If style is important, this wok comes with an attractive marble finish that will match most kitchenware collections. It scored highly on all cooking tests, and was a doddle to clean. The glass lid also adds to its versatility. Since a properly heated wok cooks food fast, it’s important to have all your ingredients prepped and laid out before you even begin. This means you need to read the recipe, wash, dry, mince, chop, and slice everything that requires it, and measure it all out into small bowls or onto plates (as many as necessary; ingredients that get added to the wok at the same time can be held in the same bowl, but otherwise it’s best to keep them separate). This wok is something of a one-hand wonder. Throughout testing, it proved to be comfortable and easy to hold and balance, whether we were tossing vegetables or transferring it from hob to table.

Don’t try to cram too much food in there. Increasing the amount of ingredients will crowd the wok and lower the heat, thus making it pointless to go to the trouble of firing up the grill in the first place. If we want to double a recipe, we prepare two full, separate sets of ingredients, lay them all out (which can be a bit of a pain), and cook one full batch at a time before starting the next one. Whether you’re throwing together a speedy stir fry, braising meats and veggies, or dabbling in a little deep- frying, the trusty wok is a worthwhile addition to your kitchen. Available in a variety of styles and sizes (and prices!), there’s plenty on the market to choose from. Woks vary in size, with smaller ones typically about 24cm in diameter and larger family models up to 35cm.
