Imagine a biscuit. Now make it crunchier and a little bit more fancy. You’ve reached biscotti. Now add Maltesers and Baileys. You’ve reached heaven. Use double (heavy) cream. Unlike the cream cheese, the cream needs to be cold to whip properly. Whisking at medium speed allows you better control so that you can avoid overwhipping. It completely depends how you slice it up, which is great because it makes this such a versatile cake for parties and gatherings. I love a big chunk of cake so I cut it into 12 slices, but for a party you may prefer to cut it into smaller slices so it feeds more people. You can cut into 16 slices, or even 24 slices. Can this cake be made gluten free? Do let the mix cool for 5 minutes before adding anything to it, then add the biscuits first. This cools the mixture sufficiently to keep the marshmallows, chocolate chips and Maltesers in good shape, rather than melting themselves, which is what would happen if they were added too soon (not a pretty sight). You could go ahead and add some Maltesers spread on top of your set cheesecake if you want to but I feel like it would just be an extra cost and you don't really need it because this cheesecake is already delicious without the spread! This recipe is sufficient to make at least 21 servings (sized approx 7cm x 3cm). Cut them larger or smaller to suit your own needs, but I honestly recommend not cutting them too much larger as they are quite sweet.
