In most cases there are spice replacement to be found or the option of omitting it completely from the dish as long as it is not the main spice used to make the dish. In a small frying pan toast the almond slices until they just turna brown colour, (or you can use ground almonds). Once browned remove and blend them. It is a triumph of a dish, creamy with a tart edgefrom the yoghurt but fragrant with spices and just a little heat.

Jalfrezi – a classic, easy to prepare Indian dish that originates from the Bengal province. It's cheap and simple to make, yet incredibly tasty.
