Wine barrels typically come in two hoop configurations. An American barrel features 6 hoops, from top to center: head- or chime hoop, quarter hoop and bilge hoop (times two), while a French barrel features 8, including a so-called French hoop, located between the quarter- and bilge hoops (see "wine barrel parts" illustration). Environmentally both aregood because we are collecting a waste product created by processing another waste product, and being in the central belt of Scotlandit hasn’t had to travel far from it’s source. Once the staves were kiln dried we managed to produce a very purebatch of charcoal with no brown ends. Although it burned very hot and lasted a good amount of time, the staves (being quarter sawn) delaminate along the planes of the fibres and spark a lot so were sub optimal for use as barbecue charcoal. We did a small test in the charcoal retort with end sections (lower moisture content) but the results were unsatisfactory. The charcoal delaminated, produced a lot of smoke and sparks, failed in places and was inconsistent. We concluded that the high moisture content requires the staves to be kiln dried before further processing for all products.Without kiln drying the staves emitted too much steam for the hydrocarbons to ignite and sustain a stable flare.

After toasting is complete the hoops (truss hoops) are pressed on to form the shape of the wood, as the barrels cool down each end of the barrel is cut with a groove on the inside, where the head is inserted. A bung hole is then drilled, the largest stave is not always chosen due to the difficulty in replacing a large stave. Once constructed the external surface of the barrel is sanded, with the hoops than reapplied.
