Use Your Favorite Flour: Feel free to swap the all-purpose flour for whole wheat flour, almond flour, pastry flour, or oat flour.Feel free to use gluten-free flour if you are gluten intolerant. Heat Treat The Flour: Spread the flour over a baking pan and bake it at 350 degrees Fahrenheit for 5-7 minutes. Allow heat-treated flour to cool to room temperature, for about 15 minutes. Birthday Cake Cookie Dough is a raw cookie batter recipe, made without eggs (I use half and half in its place to give my dough the added moisture it needs) or leaveners and uses heat-treated flour to ensure everything meets the safety standard for consumption. If you plan on serving it that day or the next day, it’s OK to store uncovered as long as it hasn’t been sliced into yet. A scoop of your favorite unflavored or vanilla protein powder (I love Vital Proteins collagen peptides).

I talk all about how to heat treat your flour in my edible brownie batter cookie dough recipe. I’ve eaten so much raw cookie dough in my time that I’m not too concerned about it and contamination is very rare, but it’s a small extra step that ensure this cake is totally safe to eat! Why not include the chocolate chips in the cake layers? Freeze the dough for a few hours until it’s firm, then transfer the portions to a resealable freezer bag. Label the bag with the date and store it in the freezer for up to 3 months.

If you are refrigerating, store them in a sealed container for about 5 days. I like to roll mine into balls and then set them on a plate or dish to set for about 30 minutes and then transfer them to a bag. It's not necessary but it keeps them from clumping together.

If you don’t have a cookie scoop, use a large spoon to scoop out cookie dough about the size of a ping pong ball. Then roll the dough into balls like you would normally do. The bites don’t have to be identically sized to be delicious. To bake them into the cake, first evenly distribute the cake batter between 3 8-inch round cake pans. Then, press 5 cookie dough “patties” into each cake pan. They should be evenly distributed all around the cake (see picture above). Then, carefully spread the cake batter on top until you can no longer see the cookie dough. Now they’re ready to bake! For your safety, it is recommended that you microwave your flour in a microwave safe dish for about 1-2 minutes to a temperature of 165°F to kill off any bacteria. You can do this in the oven as well.

Immediately pour the ganache in the center of the cake and use a small offset spatula to push the ganache towards the sides, allowing it to drip down.

How Do I Store Birthday Cake Cookies?

Almond flour: you’ll want a little bit of blanched, tremendous almond flour to carry these vitality bites collectively and hold them gluten free. No subs! Flaxseed meal: we’re adding some flaxseed meal to further hold them together and add a boost of omega-3’s, fiber and protein. I haven’t tested any substitutes and love that the flaxseed adds nutrition, so sub at your own risk.
