Our 2021 Game & Forest Dinner At Noma In Photos Bear caramel was one of many sweet surprises during our dinner at Noma. Once again, I was disappointed by the desserts, which have been the weakest link in all the seasons. Hopefully, this will improve next year, as I think it simply hasn’t been the main focus of the test kitchen. The chocolate-covered reindeer moss is just a revival of an old Noma classic, but fits well with the seasonal theme, of course. Our outdoor and indoor-outdoor Christmas light-up reindeer will be able to withstand cold and wet wintry weather too, so you can be sure your herd will last a lifetime.I first ate at Noma a dozen years ago, when it was still in a damp semi-basement with paint peeling off the wall; they moved to the sleek, stripped-wood “Noma 2.0” in 2018.
Caviar and cream in some variation is another Noma signature, which comes in a brilliant version for the game and forest season. The caviar is from the Danish producer Rossini, so high quality, and served with a dollop of the lightest whipped cream you can imagine (with tiny sprinkles of salt on top, I believe). The two ingredients are paired with a cold pheasant broth, which has formed a jelly in the bottom of the bowl. I loved this one! Founded in 2004 when Claus Meyer tapped René Redzepi to join his food revolution (the restaurant’s name is literally short in Danish for Nordic Food), Noma originally sourced all of its product from the Nordic region. The restaurant upped its approach after relocating to its current space in 2018 and now exclusively sources its product from the Copenhagen region.An abbreviation of the Danish words “nordisk” (Nordic) and “mad” (food), Noma opened in central Copenhagen in 2003 before shutting down in 2016.
Weeks after eating at the legendary restaurant, after our lives had returned to their normal rhythm, we couldn’t stop glancing into each other’s eyes, wistfully realizing that we had eaten at the best restaurant in the world. We’d then announce “we ate as Noma!” as a reminder and private badge of glory.

The meal literally ended with a reindeer bone, just like it began, albeit two different bones and two different creams. The luscious creams inside those bones – one savory and one sweet – signified an experience that was richer than the ingredients. Ceviche of berries has become a modern Noma classic, ever since their pop-up in Mexico last year. Each season – seafood, vegetable, and game and forest – have had its version of this, with the latter being the most delicious, in my opinion. This is also the best use of Noma’s caramelized baby pine cones, which I didn’t understand the use of in the two previous seasons.
