With the increasing sensitivity to gluten in a lot of people, I use certified gluten-free Scottish porridge oats (oats are naturally gluten-free, although they tend to be produced in the same factory as wheat – and surprisingly contamination is common). Grains: feel free to use other cereal flakes for your porridge recipe, such as spelt or millet or quinoa. Natural flavors are a common food additive in many of the Quaker Instant Oatmeal cereals, but vegans may be confused by the FDA definition because it includes both plant- and animal-based components. As a result, many vegans choose to avoid products with natural flavors to avoid accidentally eating something that contains animal ingredients. Rice: We recommend white Jasmine rice, but you could substitute another long- or medium-grain white rice instead. Rinsing the rice helps remove some surface starch, but the water does not have to run completely clear (1 minute of rinsing is plenty).
