Once the cucumbers and onions are diced, place them in a non-reactive pot and add the salt. Stir and let the mixture sit for 2 hours. The salt will draw out the moisture in the vegetables and after two hours you will notice a significant amount of liquid in the bowl. Cut the cucumbers into chunks and chop them in a food processor, being careful not to over-process them.

Certain recipes come into your life in different ways, and this one was begged and pleaded for after we fell in love with a jar of this courgette relish. Our friend who had bestowed this precious gift on us couldn’t quite remember where she got the original recipe from; she thought maybe The Times, but when it was passed along the quantities were in cups so perhaps it originated across the pond.Then finely dice both the cucumbers and onions.
