Tawny ports also follow the general port-making process with the notable exception that they spend less time on the skins which reduce the red color and obviously fruity character. The latter, being matured in wooden barrels, whose permeability allows a small amount of exposure to oxygen, experience what is known as "oxidative" aging. They too lose color, but at a faster pace. They also lose volume to evaporation ( angel's share), leaving behind a wine that is slightly more viscous.

If the decanter stalls, it’s rude to ask for it directly. (Oh, the English!) Instead say, “do you know the Bishop of Norwich?” Ruby port is the youngest of all the port options. It’s bottled and sold to drink right after the initial 18-month aging cycle. Crusted port is usually a blend of several vintages. [19] Unlike vintage port, which has to be sourced from grapes from a single vintage, crusted port affords the port blender the opportunity to make best use of the varying characteristics of different vintages. Unlike traditional still wine that is fermented dry, Port is fortified. During fermentation, a clear grape spirit (usually brandy) is added, which stops the fermenting process, thereby preserving many of the grapes’ natural sugars and giving Port its signature sweetness. Adding the spirit also increases the alcohol content of Port wine which is usually in the 18-20% ABV range, whereas non-fortified red wines are typically 12 to 15%. Ruby Port – Aged in steel or concrete tanks and then bottled, ruby port is renowned for its berry-forward flavour, pronounced spicing and mellow cocoa notes. It’s also the most highly produced and doesn’t tend to improve with age.

Tawny Reserva: Wine in this transitional category between Tawny and 10-year Tawny has spent a minimum of six years in barrel. This style keeps some fruit characteristics and has oxidation notes from the barrel stage. Some houses don't even declare this category. Don’t serve directly out of the fridge, let them rest about 15 minutes before serving to take some of the chills off and allow the flavors to come forward. With their nutty nuances, Tawny Port pairs naturally with nut-based desserts like pecan pie and almond biscotti, but they are also capable of partnering with savory items such as a charcuterie board of salamis and thinly sliced hams, Pecorino cheese, olives, dried prunes and apricots, potato chips and nuts. The term vintage has a distinct meaning in the context of vintage port. While vintage is simply the year in which a wine is made, most producers of vintage port restrict their production of year-labelled bottlings to only the best years, a few per decade. Contrast with second wines, where (primarily) Bordeaux producers release a year-labelled top wine almost every year, but also lesser quality wines in some years. Each bottle of port contains several different types of grape and may even be from several different vineyards!

Tawny ports do not need decanting and once open tawny port will keep for 3-4 weeks when you keep the stopper cork in & store it in the fridge. Rose port is a very recent variation on the market, first released in 2008 by Poças and by Croft, part of the Taylor Fladgate Partnership. It is technically a ruby port, but fermented in a similar manner to a rosé wine, with limited exposure to the grape skins, thus creating the rose color. Valle De Guadalupe, Baja California (near Ensenada) produces a very nice variety and quality wines. Included is Cabernet Franc - Malbec/Ruby Cabernet.
