Nathan retired from Microsoft in 1999 to found Intellectual Ventures and pursue several lifelong interests, including photography and cooking. Inspired by the void in literature about culinary science and the cutting-edge techniques used in the world’s best restaurants, Myhrvold assembled the Modernist Cuisine team to share the art and science of cooking with others. Modernist Cuisine Gallery by Nathan Myhrvold opened in 2017 after Nathan received continued requests to buy photographs found in his books. As with everything that the Modernist team does, the directions are exact and there are notes. Just when you wonder about something, they’re there with an explanation. I love this about their recipes. After preshaping , you can also cold-proof this dough at 39°F for 1–2 days for even better baking and texture results. If you cold-proof the dough, remove the dough from refrigeration 1 1/2–2 hours before shaping so it warms up and is easier to stretch out. Flip the dough over and flatten the center again, pushing the dough in an outward motion to extend the central part of the dough. It should be 6–8 inches in diameter.

The first French recipe, published in 1875, instructed cooks to bake bread dough topped with oil, salted anchovies, halved tomatoes, chopped garlic, parsley and mozzarella (which the recipe described as a soft sheep’s milk cheese), in a clean bread oven for 20 minutes. For example, they tried varying olive oil in the NY style recipe presumably, show us and tell us about 1 vs 2 vs 5 percent, etc. You'll find innovative sauces, cheeses, and flavor combinations, as well as recipes for a range of styles, including New York, artisan, deep-dish, Brazilian thin-crust, focaccia, al taglio, and Detroit-style doughs, plus gluten-free variations. Pizza may seem simple, but it’s highly technological and scientific. Making pizza is extremely technique-driven, where even the smallest variations in the method can affect the outcome. A tremendous amount of skill is involved, to the point that pizza making can be daunting to both beginners and professionals. On top of that, pizza has historically been a poorly documented cuisine, which is thanks, in part, to its humble origins on the streets of Naples.
