In a separate saucepan, bring one litre of water to the boil over medium heat. Stir in the sugar and stir for three minutes or until the sugar has dissolved. Pour the sugar syrup into the reduced apple juice. Rice— Basmati rice is perfect for this one-pan dish, but you can substitute it with any type of long rice. Don't use risotto rice because it's too starchy for this dish.

Method

Spoon into wide, shallow bowls, top with the crispy fried onions to add some texture, then garnish with the finely chopped chives. If you want some more spice, garnish with extra chilli flakes, then enjoy your fragrant dirty rice. Bell peppers— A mix of red and green bell peppers adds extra vibrancy to this Cajun dirty rice, but you can definitely use whatever colors you may have on hand.
