Almond essence– almond essence adds a sweet strong hint of almond to the sponge. If however you are not a fan of almond essence, leave it out. Start by adding the butter, icing / confectioners sugar, caramel and a few teaspoons of milk to a mixing bowl or free-standing mixer. The butter needs to be soft, so if yours isn’t cut it into a few pieces and pop it in the microwave for a few seconds to soften it.

The magic ingredient is a can of sliced apples. As long as you remember to keep this on your regular grocery list, you will be able to whip up this easy apple cake in 5 minutes and then relax while it bakes. What you need to make an all-in-one apple cake

The thing I love about a traybake is it's simplicity and this deliciously easy Cinnamon Apple Cake made from scratch is as simple as it gets. I estimate this recipe to use about 3-4 apples from the supermarket. From my garden, as they're smaller, I used 5! But I'm not going to tell you any of those things. What I am going to tell you is that I have been making this easy apple cake tray bake for years, and I can safely say it has never failed once. I call it my one-cup apple cake because you basically just need one cup of everything. It's moist, it's custardy and best of all it's delicious.

The ingredients list is pretty simple, however full measurements can be found in the printable recipe card at the bottom of this post: Yes you can, just make sure you drain the apple slices first, otherwise your slice could be soggy. My recipe tips Flour & raising agents: a mixture of plain flour (all-purpose), baking powder and baking soda (bicarbonate of soda) have been used in this recipe. Use this combination of ingredients if you can for the best results. Failing that, you may substitute self-raising flour for plain flour, but remember to add only the baking soda and leave out the baking powder. Caster sugar– also known as superfine sugar. The smaller sugar crystals of caster sugar help create a finer textured sponge. If you don’t have caster sugar you can use white sugar / granulated sugar but the sponge texture won’t be the same. It’s still delicious though 😉

If you’re using butter it needs to be soft enough to mix in so if it’s still hard from the fridge cut it into a few pieces and pop it in the microwave for a few seconds (long enough for it to soften but not melt). The batter for this apple cake is stiff to support all the apple. You will have very thin layers of cake mixture. Make sure the bottom layer covers the tin but with the top layer you will probably be able to see the apple in places. Do not worry! That's how it's supposed to be. How long does Apple Sponge Cake keep? I used unsalted butter for the buttercream and the crumble topping, for the cake I used a baking spread. Once baked, remove from the oven and sprinkle the remaining sugar over the top. Leave to cool in the tin.
