About this deal

For best rise and airiness, pipe the gluten free Savoiardi batter as soon as it is mixed. Pipe in straight lines about 10 cm (4 inches) in length and leave a gap of 2 to 3 cm between each to allow for a small amount of spreading. Like other sponge cakes, ladyfingers traditionally contain no chemical leavening agent, and rely on air incorporated into the eggs for their "sponge" texture. Some brands, though, contain ammonium bicarbonate. The egg whites and egg yolks mixed with sugar are typically beaten separately and folded together with flour. They contain more flour than the typical sponge cake. The mixture is piped through a pastry bag in short lines onto sheets, [1] giving the biscuits their notable shape. While many Savoiardi recipes are completely unflavoured, others add a touch of lemon zest or vanilla. I absolutely adore vanilla. It is one luxury that I allow myself to use in everything sweet.
