Soggy bottoms can – quite literally – make or break a pie, so we were sold on the promise of this 23cm pan from MasterClass, which has perforations on the sides and base. There’s plenty of advice about how to care for your dish, plus protective packaging for easy storage. In both of those cases, as well as during the blind baking, the material's even heat conduction yielded crisp, uniformly golden pastry layers without any weird pale spots—and because the dish was transparent, gauging doneness was easy as taking a peek at the sides or the bottom. Made in the USA from high-quality stoneware, it has the same pretty ruffled rim, colorful outer glaze (though in fewer hues), and careful construction as its French counterpart.

With two generous handles, this chunky ceramic pie dish is much easier to remove from the oven than most of the other pie dishes we tried out. Glass heats up gently and evenly, priming the pie for a consistent, but slightly slower bake than metal delivers—factor in additional baking time. But while the pan performed ably during the making of our apple pie, its aggressive heat retention led us to nearly burn our pastry during blind baking and made timing the cooking of our custard filling difficult. While each of these elements certainly can make or break a pie, one less-discussed factor is what you'll bake your pastry in: the pie plate. For the crispiest bottoms, bake pies on top of a preheated baking stone on the bottom rack of your oven. Working days are defined as Monday-Friday 8am-7pm inclusive, excluding Saturday, Sunday and Public Holidays.

Additionally, the stain-resistant glass doesn't retain flavours, so your pies will always taste fresh and delicious. Slices of pie came out of the dish cleanly, making serving neat and stress-free, and we never had to worry about scratching the durable surface with sharp knives. Pies come in many forms, the pastry can be shortcrust, filo, puff or suet, or your pie can be topped with potato. We took into account the size and overall design, considering whether it could be used for other recipes or as a serving dish.

There were definitely differences in the texture and browning between each of these pies, but all of the pie crusts we made turned out well and would have made excellent pies.To assemble our list of contenders and determine the most versatile, easy-to-use, multi-purpose pie plate, we surveyed the preferences of some of our favorite professional bakers.
