Harriet loves the traditional English sloe gin style of liqueur. After much nagging to Quentin, he obliged and created Ink Sloe & Berry Gin.

This natural floral infusion gives a remarkable and lustrous quality, most elegantly displayed in their signature Ink & Tonic, which changes colour from deep blue to blush pink when mixed. This organic, small batch, Australian craft gin resulted from distiller Paul Messenger’s experimentations with an exotic flowering legume from Thailand known as the ‘Butterfly Pea’ (Clitoria ternatea) in 2012. Ellis Gin Butterfly Pea is a lovely herby gin that’s coloured and flavoured by, you guessed it – Butterfly Pea.Paul wanted to make a gin. But being an unknown distiller clattering around a small farm shed in Northern NSW, he knew he had to do something truly different to make his gin stand out. Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. He had found the hero botanical of Ink Gin.

Traditional small batch distillation meets modern and exciting flavours with the inclusion of 13 choice botanicals. These range from fiery pink peppercorns to soothing chamomile, and even salted grapefruit marmalade. When mixed with Fever-Tree Indian Tonic, it undergoes a natural colour change from cool blue to subtle rose pink. What does a fella do when he’s planted his crop to make the country’s first cane juice rum, but knows that the whole project will take years? He decides to make a gin of course. We had been thinking for a while that we’d love to have a gin in the Ink range that is bigger and bolder, with deeper base flavour notes perfectly suited to the negroni. As Australia’s first agricultural rum distillery we are developing this style of rum with a farm to bottle™ philosophy, using sugar cane grown 100% on our farm. The final ingredient in Ink Sloe and Berry Gin is Australian rosella flowers. Growing wild on the fringes of tropical rainforest of northern Australia, rosellas are a type of hibiscus flower. Theyhave a vibrant colour and a crisp, tart flavour to balance the sweeter botanicals in Sloe & Berry.

The final ingredient is added in a post-distillation infusion. The specially prepared petals of the butterfly pea flower are steeped in the still for twenty-four hours to give Ink Gin its distinctive colour. Ink Gin is made in a hand-beaten copper pot where the botanicals are combined with 100% Australian grain sprit and water from the local caldera. All very cool; but what does it taste like? Ink Gin® is a premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives.Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance. A unique and award winning floral infused gin, pot distilled in small batches with 13 organic, native & exotic botanicals and infused with butterfly pea flower petals. Normally used in herbal tea, these petals are pH sensitive, changing colour from their natural indigo to pink when mixed with tonic water, lemon or lime juice.

The Distillery — Ink Gin

Our original gin. Modern Australian flavours with bold citrus notes of lemon myrtle and sweet orange, followed by warm pepper berry and soft pea flower. A curious deep indigo hue mixes to blush pink with the addition of tonic, sparking conversation wherever it pours. This cookie is set by Rubicon Project to control synchronization of user identification and exchange of user data between various ad services. It was all a giant experiment and the eureka moment came when he discovered that butterfly pea infused gin changed colour from inky blue to pink when mixed with, of all things, tonic water. That flower would go on to become the hero botanical of the gin, and the name of course, was to be Ink Gin. An explorer and an author found a farm nestled between the sea, the rainforest and the mountains. It seemed perfect, for they had a vision to create different types of spirit - spirits of the land and close to nature. McLean’s Gin produce a quirky and colourful collection of craft spirits from their purpose-built “Gin Lab”. Every aspect of production is carried out by the careful hand of Head Ginologist; Colin McLean.

The base gin was distilled with some of Ink Gin’s star players - juniper berry, coriander, angelica and liquorice root. The flavour base continues to build with a tart infusion of sloe berries (actually a fruit) and this tartness is balanced by an explosion of sweet red berries. Ink Bitter Orange Gin started out as an idea to bring the sophistication of the bitter orange fruit into a spirit which was accessible, versatile and nostalgic.

Cocktails — Ink Gin

Something Blue is a really fascinating blend as it somehow walks the line between dry and sweet, containing elements of both, but without ever really becoming either. Distinctly floral, complex, with a signature creamy mouthfeel, it’s a delight to drink with twists and turns aplenty. Pink Marmalade Gin is emphatically citrus, decidedly smooth and beautifully zesty. It balances organic botanicals, with a moment of colour-changing magic. On the nose there is juniper, coriander, pine, and citrus followed by a heavy dose of sweet orange.

This is Quentin’s least favourite spirit to make - it’s the most difficult. Hundreds kilos of berries go into each batch, and they need to infuse for several months. Every time we bottle Ink Sloe & Berry Gin we burn through production filters as the heavy fruit sediment clogs up the system. We make hand-crafted rum in small batches from the finest quality, freshly crushed cane juice grown, harvested, aged & bottled at Husk Farm Distillery. This month our members are getting rich and distinct flavours with this month’s Gin Of The Month – Ink Gin! Butterfly pea flowers are highly sensitive to pH. When the floral-infused Ink Gin is mixed with something of low pH (including gin's best friends; tonic water, lime or lemon), the colour changes dramatically from blue to blush pink.
