This started the wheels in motion and whilst out walking their dog and discussing potential botanicals they realised the answer was literally all around them – the Stirlingshire nettle. Our gin is distilled by hand in small batches using pure spring water from our own deep water source combined with fragrant botanicals and fresh citrus fruits. A long held ambition to launch their own gin, Shirley and Duncan Morrison purchased a small thirty litre still and began testing and developing recipes using various botanicals, slowly fine tuning what would eventually become their signature Scottish Gin expression.

Juniper, clove, cinnamon and other botanicals are macerated for weeks into three times distilled grain alcohol and subsequently distilled in XIX century copper stills. This gin boasts a sweet and floral flavour, reminiscent of the classic British candy, Parma Violets.What starts out as a blue gin, with the addition of tonic, changes from blue to purple or pink, depending on the pH of the mixer. It is the perfume-like quality of the gin which I do not find nearly so attractive this time around. Created in recognition of the UK’s police forces 200 plus year service, 20% of the profits from sales is donated to police charities supporting serving and retired police offers.

Distilled in Austria using local wheat, this big and bold gin is made using 27 different botanicals including hops, almonds, chamomile and clove. Fun fact: The blue pea flower reflects the pH (acidity or alkalinity) of the mix and, as tonic is more acidic, the colour will change to a light pink when it’s added to the gin. The Blue Gin is a refreshing and crisp gin with a tangy citrus taste, followed by subtle notes of juniper and coriander.
