About this deal

All the whiskeys used in The Causeway Collection have been expertly created and cared for by craftsmen steeped in a unique whiskey-making tradition passed from generation to generation for more than 400 years here at The Old Bushmills Distillery. The ten year old Sauternes Cask Finish from 2011 has a gentle, slightly fruity nose which complements rather than competes with the oak vanillins. The taste is classic Bushmills Malt, sweetened even more by the Sauterne influence. Not a lot of water required to tame it, even at Cask strength. Antrim, Friday 11 th December 2020: Bushmills ® Irish Whiskey today announced the release of its 30 Year Old New American Oak Cask single malt. With only 100 bottles available in 2020 and the remaining 332 bottles to follow in 2021, the release is the highest aged reference so far in The Causeway Collection, a series of extremely rare and unique cask finished single malt whiskeys from the world’s oldest licensed whiskey distillery. This latest release will be exclusive to The Irish Whiskey Collection at Dublin and Cork airports. The rare and limited 27-Year-Old Bourbon Cask is available now, exclusively from The Irish Whiskey Collection at The Loop, Dublin and Cork Airports and online at theloop.ie. Only 678 bottles of this single malt are available, bottled at cask strength (52.1% ABV), non-chill filtered and priced at RSP €650 DP for 700ml. These references are part of the 2023 release, the fourth, of the prestigious Causeway Collection from the world’s oldest licenced whiskey distillery. Curated and selected by Bushmills’ visionary Master Blender, Alex Thomas, it features nine rare cask-finished Irish single malts boasting unprecedented finishing in diverse, rare and unique casks from across the globe.

The Bushmills 2022 Causeway Collection references vary in age from 9 to 33 years old, are all non-chill filtered and range in price from from €90 to €1200. My own impressions on the 2021 Causeway Collection? These are two exceptional Cask Strength Single Malt Irish Whiskeys. Each whiskey, carefully selected by Alex for release this year stands with the best of single malts, a giant in its own right. This third iteration includes a 33 Year Old Port, the oldest expression ever released from The Old Bushmills Distillery, as well as 25 and 30 year old Madeiras, an 11 Year Old Cognac and an 11 Year Old Banyuls. The travel retail-exclusive 27-Year-Old Bourbon Cask has been launched as part of The Causeway Collection.

The new Causeway Collection is the work of Bushmills Master Blender, Helen Mulholland, who has enjoyed a nearly three-decade-long career at The Old Bushmills Distillery. In fact, many of the whiskeys used in the new range were laid down by Helen during her work placement at the distillery in the early 1990s. Palate: The palate follows the nose very well - liquid christmas pudding comes to mind. All those dark fruit notes of dates and raisins along with stem ginger, toasted hazelnuts and boozy sherry with sweet cake batter marry together. Frangipane also. This is underpinned by the Bushmills signature notes of bananas, peach and tropical fruit. Water brings out more syrupy sweetness from the Malaga casks along with spicy wood notes but again body wise the whiskey suffers.Tasting is where the Marsala influence strikes with sudden intensity. There are multiple layers of dried fruits, pimento and rich dark honey . There’s an almost viscous mouth feel fading to a long bitter-sweet finish of very dark chocolate. Even at cask strength, it can be sipped neat with none of the flavours masked by the alcohol. To fully appreciate this whiskey, add a little water to bring it to even greater heights. I found the water envelope to be quite tight as I added a drop too much on my first attempt. One of the fun things about cask strength whiskeys is that the last person involved in making this whiskey is you as you add that final touch of water to make the best version of this whiskey just for you. This is why it’s considered “slightly” rude in Ireland to water another person’s whiskey!! Sensationally smooth and sweet, with vanilla and chocolate interweaving on the tongue, and a warming spiced coconut. Then the gentle wood note reappears, to remind us of its 30 patient years spent sleeping in oak casks. Someday that journey you promised to make will start today.
