About this deal

The beauty of this cake is that you can use whatever dried fruit you have, add nuts and cherries - anything you like or have.

Lakeland 2lb Bread Loaf Tin | Lakeland

An extra sprinkle of lemon zest over you chosen dollop will look really pretty and professional too! You can check if it's baked by removing from the tin, flipping it over carefully and tapping the base – it should sound hollow.I decorated the cake with vanilla buttercream, but you could make some icing with icing sugar and vanilla extract and/or water, and drizzle it over instead for an even simpler decoration. You only need five ingredients to make this loaf – strong bread flour, yeast, salt, butter and water.

As soon as a thin skewer inserted in the centre comes out clean, the cake is done and should be taken out of the oven. I have not tested this in a 2lb loaf tin, so I cannot give you a definitive answer, but my best guess would be same temperature for 1h15-1h30. To freeze the loaf cake decorated, freeze on a plate until frozen solid, then carefully wrap in cling film. Thanks again to Vanessa, for her advice about egg replacement: I make this vegan by using the equivalent of 3 flaxseed eggs (1 egg replacement – 1 tablespoon flaxseed and 3 tablespoons water, blitzed until its smooth and starts to thicken up).If you have any questions about this recipe, or if something went wrong and you need help, please use the comment form below and I will get back to you. And it’s not just the Christmas loaf cake that’s easy to make… the Christmas loaf cake decoration is also super easy… and yet looks really pretty! Baking parchment loaf tin liner- stops the cake sticking and keeps the tin clean - so less washing up. Thanks to Vanessa, one of my readers: I’ve made this several times using gluten-free flour, I just add a teaspoon of baking powder and twice as much milk, as I find gluten-free flour tends to absorb more moisture. I have just started bread making and have tried quite a few recipes, but yours produced the best bread and your steps and pictures are so helpful and easy to understand.

If you're not familiar with these terms, the creaming method refers to adding ingredients one at a time and mixing between additions. Mostly I love cooking and baking, but combining work and home life often leaves me feeling that providing healthy, tasty food for my family is a chore.

You can also slice the cake and freeze slices, either wrap them separately, or place a small square of baking paper between each slice and stack them in a freezer bag or tupperware container. Loaf cakes are also known as pound cakes, this is because they were traditionally made with 1lb (one pound) of each ingredient - butter, eggs, flour and sugar.

This is best done with an electric mixer, or in a stand mixer, but you can do it by hand with a whisk or spoon too. Oven safe up to 240°C and with excellent heat distribution to ensure your loaf will be cooked through evenly, it also has large handles with sure-grip silicone inserts so getting it in and out of the oven is easy too. Able to withstand higher oven temperatures than greaseproof paper, our silicone paper baking parchment is ideal for lining baking tins, oven trays and soufflé dishes and perfect for a multitude of other uses, too. I know I obviously did something monumentally wrong, I’m wondering if my butter wasn’t warm enough or if it was because I didn’t put oil in the bowl before I placed the dough back in or if it was the salt, it touched the yeast when I put it in the bowl.I would expect it to be crumbly if, for example, you did not soak the fruit, or if you cooked it for too long or at a higher temperature… but I am assuming you would have said if you’d done something different. I always grease the tin lightly before adding the liner or baking paper, as this helps to keep the paper in place and stop it from moving around when you add the batter. I will make them again just before Christmas in the hope I can get the marzipan and icing on before it is eaten this time. You won't be able to make the lemon drizzle part of this recipe, but you still make the cake and the lemon icing. I wouldn’t recommend freezing an iced Christmas cake, however, as the marzipan and fondant icing do not fare well in the freezer!
