Corn flour contains all parts of the whole corn kernels, and for this reason, it is recognized as a whole grain. Yet, whole wheat and white flour are vastly different. Whereas the whole wheat version is made by grinding entire wheat kernels into a powder, white flour removes the most nutrient-rich parts — the bran and germ ( 21). And therefore this recipe is made with Potato Fiber by me, but I do believe and trust that Oat Fiber would be perfectly replaced here as well. Moreover, bamboo fiber flour provides satiety by prolonging feelings of fullness due to its slower digestion rate compared to refined flours. The inclusion of bamboo fiber flour in one’s diet may also contribute to a reduced risk of developing cardiovascular diseases.
