Through the reverse osmosis plant, the spent water is treated to a standard whereby it can be re-used in the process as boiler water. This is resulting in an approximate saving of 35% of our water requirements. Method and Madness Rye & Malt is the first aged experimental distillate release created at the micro distillery in Midleton, Ireland. This particular expression has been been finished in ginger beer casks for a generous 12 months – twice as long as its sixth edition – which has given the double pot distilled whisky an extra generous level of citrussy spice. It also spent some time in apera (Australian fortified wine) and wine casks sourced from across the globe. Expect notes of warming, fresh ginger alongside more mellow, candied ginger, vanilla syrup, and tropical fruit. This Welsh single malt from Penderyn, located in the country’s picturesque Brecon Beacons, has been aged in ex-Bourbon barrels and bottled at 41% ABV. The cross-dual dishes were selected in such a way that they don’t only match one particular whisky – try them with the various whiskies and decide for yourself which pairing strikes gold,” Simon adds.

I just returned from South Africa (Cape Town) and a lovely time was had by all. While travelling, I always try to carve out some time early in the trip to seek out a bottle of whisky or whisky-adjacent spirits that are locally made, or at least only available locally. I do this for two reasons: First, it’s easy to get tunnel vision about what products are available at my regular liquor stores, and I like to try to get access to things I can’t get at home. Second, then I have a bottle of whisky that must be finished before the return trip!

Gold medal-winning Stauning Rye is produced with malted Danish rye and barley, which has been floor-malted at the distillery. It is distilled on open-fired stills, and matured in new American oak barrels, and was praised by Abbott for its “solidly spicy nose – gingerbread, spiced biscuits and a load of green leaves” and “rye-forward palate with layers of chocolate, mint and grass”.
